After a few months of my mom being out of the country, I was really excited to see her again! After work we went out for a little catching up time over dinner at Canyon Creek. I always mean to try the Seared Tuna Salad, but their daily specials always end up drawing me away. Today I decided to finally go for the salad, even though their specials did look good.
Of course, we started with some warm bread + honey butter -
It was delicious, so I had two pieces
Then it was salad time!
I thought the salad was beautifully presented, but I was a little unhappy because I had asked for the dressing on the side and she brought it not on the side. It was so pretty and I didn’t want to wait for them to assemble a whole new one, though, so I just ate it as it came. It was still delicious, just a little over-dressed for my tastes. There was also a huge pile of wasabi hidden under the one corner that I didn’t see until too late. I ate almost all of it at once and it nearly made me cry! That stuff is dangerous
I also had to take a picture of my mom’s Lobster and Shrimp Cobb Salad (what I almost ordered off the specials menu myself) just because I thought it was the cutest cobb salad ever!
It was so nice getting to spend time with my mom, and I can’t wait to see her more over the next week! I think she’s a little camera-shy, but I’m working on it
After dinner I was craving something a little sweet, so I had 2 squares of dark chocolate.

After my chocolate I left to go to a yoga class at my gym, which I found very disappointing. I don’t even know if I’d call it yoga… more like “light stretching for seniors”
We spent the first 30 minutes warming up, and then did pigeon pose, and then warrior 1&2 for about 5 seconds, and then we laid down and meditated. I was so not impressed – it didn’t even feel close to yoga at all
I felt so frustrated and disappointed afterwards because I was expecting a light workout and chance to relax, and it was neither.
To make myself feel better when I got home, I baked.
What can’t baking fix?
Even though my fridge is pretty bare right now, somehow I had all the ingredients I needed to make Angela’s Cherry Banana Coconut Butter Bread. Was it fate!?
I could barely contain my excitement – I basically sat in front of the stove waiting for it to finish cooking! While I waited I cleaned the kitchen and did all the dishes, which is the best feeling ever when everything’s all done and there’s still more than half an hour on your timer!

What better to eat on your Cherry Banana Coconut Butter Bread than coconut butter?
I was a little nervous because my first piece was a little dry, and was afraid the not-so-great whole wheat flour I’m currently trying to work my way through managed to suck the soul moisture out of my beautiful bread, but when I went back for a few several more slices after storing the loaf in a gigantic ziplock bag, it was super moist and perfect!

haha great post! Glad to hear that using whole wheat flour worked too! It looks gorgeous! In other news I need to take the rest of my bread out of the freezer! lol

I actually used 1 cup whole wheat + 3/4 cup white, just because everything I’ve baked with 100% this brand of whole wheat has turned out badly in the past. The recipe was awesome – the loaf is already almost gone!

Definitely worth it! (I’m peer pressuring you now because the $12 price tag of coconut butter might not agree with your efforts to be frugal, so just remember my convincingness when you’re in the grocery store lol

That bread looks AMAZING! Where do you do yoga? I usually only do it at the gym but I’ve been thinking about trying an actual yoga studio!

It tasted amazing!
I usually do yoga at Lululemon stores on Sunday (it’s free!). I would love to join a yoga studio but I don’t think I can afford it anytime soon, but if you have the means I would say it’s worthwhile!

This looks so good! I’ve had the same experience before where I think a loaf bread turns out dry, and then letting it sit in a baggie for a while helps a lot. I think I’ve read somewhere that desserts with baking soda and powder (one or the other, can’t remember!) always taste better the day after baking, rather than the day of.

Yeah, I think maybe the baggie keeps the steam moisture from escaping and that’s what makes it more moist? I never knew that about desserts that contain baking powder/soda though, I’ll need to look into that!
