Good evening!
It feels good to be working my way back into the blog world a little, now that I’m managing my life at school a little better. It’s definitely not easy trying to balance 24 hours of class (and about equal amounts of homework) each week with exercising, cooking and blogging, and I can’t say that I’m doing a perfect job about it, but I’m darn well trying hard!

I’m getting used to throwing together quick, easy and delicious breakfasts for the days when I only have a short time to get ready for class after an early morning hot yoga class.

Last night I set a mix of 1/3 cup oats, 1 heaping tbsp chia seeds, 1/2 scoop Amazing Grass Chocolate Green SuperFood and 2/3 cup almond milk in the fridge to thicken, and stirred in half of a chopped up mango when I was ready to eat in the morning.

Look at those mango chunks! I almost didn’t want to eat it because it looked so pretty, but my stomach was growling after working hard in yoga

Before heading out the door, I grabbed a quick breakfast-dessert of a milk chocolate Adora disc. I’ve been downing these like crazy – I always eat my three per day!

Lunch today was packed because I was on campus in class all day (just like almost every day). I had some leftover Cheesy “Callieflower” Pasta, an apple, carrot sticks and a bag of cocoa roast almonds.

The pasta was a little mushy after being microwaved, but it was just as tasty as yesterday!

Dinner featured leftover pasta, too – I had some reheated with a spinach + balsamic salad, and the carrot sticks I had leftover from my lunch with a La Croix soda.

I always seem to be ditching my fruits and vegetables and filling up on starchy carbs lately, which I want to turn around.

Dessert was some vanilla ice cream with a cookie and some dark chocolate-covered coffee beans. My roommate asked why I was eating coffee beans at 8 at night, which I hadn’t thought about… guess I’ll be up later than planned! Good thing I have plenty of midterms to study for
