Hello blog friends!
How are you all doing? I’ve been busy with work (which is really picking up!) and other things, but have dusted off the ol’ camera and snapped some pics of my eats.
Lately, even though the weather outside is cold and dreary, all I’ve wanted for breakfast each morning is a green monster.

It’s a pain in the butt washing the blender every morning, but totally worth it for an awesome smoothie. I bring them into work to sip at my desk everyday, but nobody’s asked about the green drink yet.

Unfortunately I left packing my lunch until this morning, which was a mistake because I’m the worst at getting up on time and always run late! I managed to throw together a makeshift lunch of a frozen bagel thin, an apple, a banana, leftover celery + carrots from yesterday, and sunflower seed butter to put on everything. It was actually an awesome lunch!
Dinner was also super simple but delicious!

I baked up some of the Gardein “chicken” fingers I had left in my freezer, and cut up some raw celery, carrots and broccoli to serve with it.

To dip everything in, I mixed up some oktoberfest mustard, mayo and honey for a tasty sauce.
Tomorrow I’m planning a dinner that’s a little more special than chicken fingers and veggies, and I’m even breaking out the crockpot for it
