Hello blog friends! Hope everybody got through the Monday blues okay
My day started off a little rough with a thermodynamics midterm, but it ended on a pretty great note, so I can’t really complain. We’ll talk about that in a bit, but first let’s get through the food, shall we?

The combination of warm weather and my obsession with blueberries ended up as a blueberry-banana smoothie made with frozen blueberries, frozen banana, almond milk, protein powder and ice. I’m used to drinking green smoothies, so the pop of purple was definitely a change!

I knew that just a smoothie wouldn’t hold me over, so I brought a coconut Lunabar to munch on during the midterm.

I packed up a nice, healthy lunch to bring to campus with me. I’m making it a personal goal to eat at least one salad every day from now on in an effort to eat more vegetables.

I had a salad with green leaf lettuce, tomatoes, cucumbers, and TJ’s goddess dressing (love).

With a leftover bun + earth balance on the side. Carbs are what make the meal.

I also brought a greek yogurt and an apple, but these were left uneaten due to the Tim Hortons iced cappuccino I picked up during lunch. Not the most healthy swap, but so delicious

Dried peach and peanut butter cup snax were also mostly left untouched – guess I already have my snack for tomorrow packed

When I got home all I wanted in the whole world was some KD, so I made up a box of organic mac and cheese, added in some frozen peas, and went to town. It was freaking awesome.

Dessert was also awesome. My roommate got a free ice cream coupon off a box of cereal she bought, and used it to get a carton of PC cookie dough ice cream today. She was nice enough to share, and there were so many chunks of cookie dough in the ice cream. Sooo good.
In other news, I bought a ticket for this year’s Healthy Living Summit!

Originally I didn’t think I’d be able to go because of exams, but apparent our exam schedule is much earlier than usual this year, so I’m going to be out of school when the summit is happening. I had a great time last year, and I have a feeling that this year will be even better.
I’m excited to go to Philly for the first time and meet a bunch of amazing bloggers!
