Early Family Day

Hello! I hope you’re all enjoying the long weekend (if you have one). Today is Family Day in Ontario, but my parents are on their way to a tropical vacation without me, and I’m stuck alone here in the cold. How nice of them, right? ;) My day definitely wasn’t bad, though – I managed to get a bunch of cleaning done, and spent a lot of time relaxing on the couch. Exactly how I wanted to spend my day off work :)

I was also able to spend some time with my mom yesterday, before she left for warmer weather, so I’m counting that as my celebration of Family Day.

Before I met up with her, I inhaled two dates and got in an hour of free yoga at Lululemon.

Then I hurried home to get ready, and made a quick smoothie with almond milk, banana, strawberries, protein powder and almond butter. I didn’t want to eat anything too heavy, because we were heading to Fresh for a lunch date.

After the subway ride there I was already starving, so I got a cherry blossom juice, which was cherry, apple, raspberry and banana. It was so good it rivals my favourite yellow brick road juice ;)

For my meal I got the mini life salad, because I know their portions are huge and didn’t want to be carrying around leftovers all day. The salad was delicious and the perfect size – I loved everything about it! It went really well with the vegan caesar dressing I chose, but I’m sure it would be delicious with any one of them.

My mom got a wrap, and shared her sweet potato fries with me :)

Afterwards we wandered around outside a bit, and stopped down the street for my new favourite thing ever, Menchie’s froyo <3

I went a little crazy with flavours and toppings again – I got original tart, cake batter and pina colada, topped with mochi, brownie, lucky charms, coconut and maraschino cherries.

This is the crazy look someone gets when they’re in love with a dessert. I think I scared my mom a little.

I’m sad that my parents are gone for a while, but I’m glad I got to at least see my mom for a bit before their vacation. I’m also sad that my “vacation” ends tomorrow, and it’s back to work and the real world. Bah :( See you on Tuesday!

Yoga Fail

When life gives you lemons, make chocolate hazelnut pancakes.

Or something like that, right? ;)

This morning I was all ready to go to a yoga class, but I didn’t sleep well and hit the snooze on my alarm when it went off. By the time I managed to drag myself out of bed and to the yoga studio, I was a minute or two too late and missed the start of class. I felt so sad, standing outside in the pouring rain at 6:30 in the morning, looking in through the windows… :(

So I went home and made some pancakes.

I made Angela’s Healthy Spelt Pancakes for One, and topped them with chopped hazelnuts and an Adora disc (because I need my calcium ;) )…

And drizzled them with a mixture of maple syrup + coconut butter + natural chocolate sauce.

Best. Breakfast. Ever.

After I drowned my yoga sorrows in delicious chocolatey syrup, I got some work done and then took a nap before I had to head out to class.

Before leaving for class, I threw together a pumpkin pie smoothie with 1 cup almond milk, 1 frozen banana, 1 scoop vanilla protein, 1/2 cup pumpkin, 1 tbsp maple syrup, 1 tsp molasses, pumpkin pie spice and cloves. I brought it to class with me in my reusable cup, which hasn’t gotten out much lately :)

I had it all planned out to try going to a vinyasa yoga class after my regular classes for the day were done, so once I got home I inhaled a bunch of graham crackers and made sure I left for the studio with plenty of time. The vinyasa class was super challenging and kind of made my legs feel like they were going to fall off, but I’m really glad I got the chance to fit in some yoga even though I missed the morning class.

I already knew what I wanted for dinner by the time I got home, so I got started on the baking and got everything thrown together pretty quickly.

A freshly baked cornbread muffin (from a PC Organics mix) with butter, maple beans and a fried egg. This was honestly the best dinner I’ve had in a while. Even though it was super simple, there was just something perfect about it :)

I’m going to go eat another muffin and study for my economics quiz tomorrow. See ya later!
