Breakfast > Lunch

Thanks for the kind comments everyone, I got a great night of sleep and I’m feeling much better today :) I think the Amazing Grass might have had something to do with it too, so I kept up the dosage this morning.

1 scoop Amazing Grass Chocolate SuperFood, 1/3 frozen banana, 1 nectarine, large handful of steamed spinach, 1 tbsp chia seeds, 1/2 tbsp cocoa powder, squirt of agave, 6 ice cubes. I also snacked on some dried mango slices as I was walking out the door :)

Lunch came in the form of breakfast #2.

The end of a greek yogurt tub with 2 chopped nectarines, sunflower butter and the end of a cereal bag.

And edamame + an apple :)  I buy bags of the pre-shelled beans, and simply pour some in a tupperware with a sprinkle of salt for a quick and easy snack. They defrost by lunchtime, and a 1/2 cup serving is only 110 calories and packs 10g of protein!

Nice and balanced.

Today is draaaaaaaaagging by because I’m just not in the mood for work today, and also because I have a Fresh date I’m excited about with some wonderful blog ladies tonight :)

Mix My Granola (And Salads)

Hello blog friends! Happy hump day :) Even though it seems like I haven’t worked a full week in forever, this week doesn’t seem to be dragging by yet. Maybe because it’s my second-last week at work!!

Today was an early day, so I packed a quick, portable breakfast to bring into the office.

2 small chopped nectarines, greek yogurt (missed so much!!), sunflower butter and the bag of Mix My Granola from my HLS swag. It was a nice breakfast, but I wasn’t really a fan of the granola. It was more like cornflakes that a “real” granola :?

I was so hungry by 11 that I actually got out my lunch early.

I didn’t want to bring the same thing in for lunch 3 days in a row, so I switched it up a little.

I mixed together some chopped carrot, chopped cucumber and edamame, and dressed it in a mixture of hummus + light mayo to make an easy chopped salad. It was a little thick when I made it last night, but I knew the cucumber would let out lots of water overnight and it was perfect today. It went really well with the spinach and Arnold’s wheat thin I brought along with it :)

My cottage cheese dessert was off the hook (as Angela would say, lol). See that bottom layer? Yes, that’s caramel ;) And chocolate chips on top!

Afternoon was workworkwork.

And snack was 2 nectarines + swag herbal water. I wasn’t a huge fan of the herbal water either – the taste just seemed off. I guess today is just full of swag duds? :(

I was going to hit up Zumba for the first time in weeks tonight, but I’m not feeling too well anymore, so I might just stay home and relax. Even after 2 nights off, I think I’m still drained from the trip to Chicaco. I’ll see how I feel in a while, because I really want to go! Talk to you all later :)

Busy Day Before HLS!

Hey everyone, how’s your Thursday? :) I’m so busy prepping for the road trip down to Chicago! I’ve been running around cleaning and packing and cooking and essentially going insane. But I am packed now (mostly).

Innocent coconuts were hurt during the process.

All of that liquid on the ground is coconut water. I cried a little inside, but I was in a hurry and didn’t have drill bits to get it out before the smashing :(

I started off the day early, and brought my lunch into work.

A cinnamon hummus (!!) bowl with greek + vanilla yogurt, banana and blueberries. It was so delicious!

Lunch was eaten on the run, because I had to stop by the civic court to take care of a speeding ticket I got a few months ago in a very unfortunate situation. It was a pain in the butt going through the process of dealing with it, but I’m glad it’s done and paid, and only came out to about $60.

Quick leftovers and cut up carrot + apple slices, with a chocolate peppermint stick Luna bar :)

Then I came home, thought about resting for a bit, and decided that I wanted to finish up my packing and head to the gym for a quick run before I had to go pick up Susan from the subway station. Now I’m basically coming up on my “very latest time you have to leave by” deadline, but what else is new? ;) I made dinner while I was packing, but didn’t really feel hungry so I packed it up and will probably eat it after the gym or when we arrive in Kitchener.

Just sauté some chickpeas in a pan with curry, fresh chopped coconut and almond milk.

I think I did pretty well on my to-do list for the week.

  • I exercised every day, even today (which I hadn’t included in my plan).
  • I did all of my laundry (except for hand washables), and even though I didn’t clean as well as I had hoped, I still did a pretty good job.
  • All packed up!
  • I’m not sure I drank enough water every day this week :( Still trying, though!
  • Didn’t start on my work term report either, oops!

So that’s about a 3.5/5, right? ;)

Anyway, I’m off to throw some last minute things in my suitcase and double-check that I didn’t forget anything (which I probably did anyway), get sweaty on the treadmill, and then pick up my HLS road trip date. Have a good night!

Beluga Bars

Beluga whales love Glo Bars, didn’t you know? ;) But I’ll get to that after today’s earlier eats.

Breakfast was a quick mix of plain nonfat yogurt, blueberries, strawberries and agave with some PC high protein cereal to put on top.

This cereal is my favourite but it contains some not-so-nice ingredients, so I’m trying to find an alternative. Until then, I’m sticking with this one!

For lunch I had a questionable tofu and kale scramble seasoned with salt, pepper and nutmeg. I had brought it for lunch yesterday and it sat out all day as well as in my warm car for an hour or two, so I wasn’t sure if it would still be good but it actually tasted great!

I had it with some Kashi crackers, a square of Lindt sea salt chocolate and an apple. Please pretend that the grapes in the picture are an apple – I took it yesterday when I did have grapes, but they got eaten and I had to sub in another fruit ;) I also snacked on some baby carrots that went unpictured because I was in such a hurry to get to work!

I’m really not a morning person, and I ended up sleeping in late today so I had to skip my shower :( I don’t really like showering (seems like too much effort with the blow-drying and hair-straightening and whatnot afterward) but I hate NOT showering even more. It makes me feel gross and lethargic all day! I almost decided to skip my run after work, but decided to go anyway, because why not? I wanted to really make it count, so I worked my butt off and ended up beating my PR by about 5 minutes with 3.1mi in about 30 minutes!! I wanted to try and get under 30 so I basically sprinted at the end, which gave me chills and a slightly sick feeling. I felt great after though! I’m still very new to running so I thought this was pretty awesome :D

When I got home I finally got my shower (it felt soooooo good), and I also wanted something to tide me over because I knew dinner would be late.

Beluga almost didn’t share with me, but we had a talk about manners, and he changed his mind ;)

He liked it a lot, but I think I’ll be keeping him on a steady diet of invisible apples. Cuts costs a bit, right? ;)

Now that I’m done being silly I’ve got to run, because I’m off to meet up with some lovely ladies and don’t want to be late! Have a fabulous evening, and I’ll let you all know about mine later :)

Time Warp

Life has been extremely stressful for me lately. Between putting in extra hours at work due to being crazy-busy, my mom being home for a short while, trying to make it out to the gym, cooking healthily and blogging, I feel like my time just disappears! Today I wasn’t feeling very well (probably due to too little sleep and too much coffee), so I decided to skip Zumba for the night and relax at home. Before I knew it, it was already 9:30 and I hadn’t even blogged yet! 8O

Breakfast followed the “omgrushed!” theme, and was the end of a greek yogurt container filled with an extremely overripe banana, chocolate syrup, cocoa powder, agave, coconut and a chunk of coconut butter. The chocolate syrup was totally necessary for a day like today ;) I also brought some granola on the side to pour in, but I ended up just eating it out of the baggie.

Somehow I managed to squeeze in lunch during the day, which consisted of a salad, a crazy-looking pear, some baby carrots and snow peas, and the Chocolate Peppermint Stick Luna bar I’ve been carrying around ever since Monday because it never ended up eaten.

The salad was garden lettuce + steamed kale, topped with a fried egg, chickpeas, avocado and dijon + honey.

By the time I left work I wasn’t feeling very well, and I decided that a relaxing night at home would probably be more beneficial to my body than a Zumba class, even though I haven’t done anything really active since my run on Sunday. I stopped by the grocery store to get some fresh fruit and other essentials, and headed straight home after. My stomach was feeling a little woozy, so I decided to stick with some soup and a small salad for dinner.

Soup was Amy’s alphabet with a big dollop of plain yogurt (grocery store was out of greek again!!), and the salad was spinach + blue cheese dressing with a chicken tender from the freezer, just because.

I won’t admit how much time and effort that took me :P

It’s hothothot here, and even though I have the AC blasting, I was still craving something cold for dessert. Especially something that would pair nicely with the jumbo bag of chocolate chips I just bought ;) BSS seemed like a good idea, so I popped some bananas + soymilk + vanilla into the blender and ended up with a creamy bowl of goodness.

I think I underestimated how much banana I put into the blender, because it made a monster bowl of soft serve! I ate it all though, and enjoyed it thoroughly :) I also might’ve snuck a few extra handfuls of chocolate chips – they’re my absolute favourite and are dangerous to have around!

As an extra way to try and save some time everyday, I downloaded Ecto to try out for the 21-day trial period. I’ve heard good things about it and thought that it might be worth the investment because I tend to be very busy, especially during school. This is my first entry using it, and it seems pretty good so far! It might be a keeper :) Anyway, I’m off to cuddle with my whale and hopefully sleep for a solid 8 hours. Good night!
